Originally a fast, affordable meal for the working class, it captured the world’s heart in 1889. That was when Chef Raffaele Esposito created the “Margherita” — using tomatoes, mozzarella, and basil to represent the red, white, and green of the Italian flag — in honor of Queen Margherita’s visit.
